In my quest for getting my family to eat healthier, I have tried to incorporate a fish dinner at least once a week. This week it's salmon. The choice is typically made by what it on sale for the week because, let's face it, seafood isn't cheap. The family was not particularly fond of salmon until I started making it with a pecan crusted coating. Now it's one of our favorite dishes. I'm not a big fan of bread crumbs, so instead I use crushed Ritz crackers. I can even sneak the wheat ones in without them noticing. Pair it with some rice and steamed veggies and you have a filling meal that is quick and easy to make.
