Berry and Spinach Salad

I love this salad. It's so delicious! The only bad news is now I have used up my entire stock of blueberries from our picking outing last April. Guess I need to get more this year. If you can't find honey roasted almonds, the coconut or cinnamon almonds are tasty, too! Ingredients Fresh spinach leaves Fresh strawberries, sliced Fresh blueberries Goat cheese or honey goat cheese Honey roasted almonds Grilled chicken (optional) Directions Gently mix berries and cheese in a bowl. The strawberries, blueberries and goat cheese will break down to make the best dressing. Pour over spinach and top with nuts and chicken.  Put this together in no time. It's easy to make for 1 or 10. Super simple, super quick, and super yummy!

Blueberry Picking

We are so fortunate to live in Florida where we get some of the best fruit ever. Not only do we get to eat it, but there are lots of places where you can go pick it, too. My parents used to have an abandoned blueberry farm behind their house, in Georgia, and we would go pick from there. However, because those bushes weren't maintained, they were quite tall and unruly. That farm is now gone and has been replaced with houses, so no more free berries for us.  Instead, we found a cute, little family farm to take the kids to pick blueberries back home in Plant City, Florida. The biggest draw we had to this particular farm was that they are a family farm that loves kids to visit. Proctor Family Farm is clean, well-maintained, and the people are very friendly.  And what a perfect day we had for it. Blueberry, Walnut, and Brie Tarts

I copied this recipe to try last year and just now got around to trying it. It was so long ago, I can't even remember where I found it. I think I put it off because I thought it was going to be too hard. Then blueberry season was over, so I put it off again.  Boy was I surprised when I discovered how easy these were to make.  Want to make some, too? INGREDIENTS : 1 can (8 oz) refrigerated crescent dinner rolls 1/4 cup blueberry (or blackberry) preserves 1/3 cup coarsely chopped walnuts, lightly toasted 1 round (8 oz) Brie cheese, rind removed, cut into 24 chunks Fresh blueberries, if desired DIRECTIONS : Heat oven to 350°F. Unroll dough and separate into 4 rectangles; firmly press perforations to seal.  Cut each into 6 squares. Gently press squares into mini muffin cups (dough will not completely cover inside of cup; do not press too much). Spoon 1/2 teaspoon preserves into each cup.
