Paleo Stuffed Chicken

Got another Paleo recipe for you! This is one looks much more difficult than it is. In fact, I think producing these meals has made me feel like I can actually cook. Maybe. We like topping ours with our favorite spice blend. Ingredients: Chicken breasts - slice open butterfly style 1 slice of deli “honey baked” ham 3 asparagus stalks, hold each end and bend until it breaks, use only the top half 1 slice of brie cheese Olive oil Salt and pepper Your favorite spice blend  Directions: Stuff chicken with ham, asparagus and brie. Hold together with a toothpick. Sprinkle olive oil, kosher salt and black cracked pepper over the chicken or use your favorite spice blend. We use  Minorcan Datil Pepper Spice  and it's perfect! Bake on 400 degrees for 15 minutes. If your breasts are really thick, you may need more time. YUMMY!  This is a great way to not serve chicken the same old way.

Berry and Spinach Salad

I love this salad. It's so delicious! The only bad news is now I have used up my entire stock of blueberries from our picking outing last April. Guess I need to get more this year. If you can't find honey roasted almonds, the coconut or cinnamon almonds are tasty, too! Ingredients Fresh spinach leaves Fresh strawberries, sliced Fresh blueberries Goat cheese or honey goat cheese Honey roasted almonds Grilled chicken (optional) Directions Gently mix berries and cheese in a bowl. The strawberries, blueberries and goat cheese will break down to make the best dressing. Pour over spinach and top with nuts and chicken.  Put this together in no time. It's easy to make for 1 or 10. Super simple, super quick, and super yummy!

Paleo- Eggplant Bruchetta

I love Eggplant Parmesan, but it's not exactly on the Paleo diet. This is the next best thing and it's super simple to make. It's got great texture and flavor. I have to admit, the hubby doesn't care for it, but K1 and I love it. I guess I can only push vegetables so far.  More for us! Eggplant Bruschetta: 1. Heat Oven to 350  2. Slice the eggplant into even slices (don't slice too thin or they will burn - about 1/4 inch) and lay slices out on a sheet pan sprayed with olive oil 3. Lightly shake salt and pepper over eggplant slices and place in the oven for 15 minutes 4. Flip eggplant over and add salt and pepper to the slices and place back in oven for 10 minutes Bruschetta topping: • 3 or 4 ripe plum tomatoes • 1 clove garlic, minced • 1 tbsp extra virgin olive oil • 1 teaspoon balsamic vinegar • 3 fresh basil leaves, chopped • Salt and freshly ground black pepper to taste Place eggplant on a plate and top with bruschetta and fresh mozzarella. ...

Mini Pizzas

  If you have battles over what toppings to put on the pizza, then this is just for you! It's the perfect size and simple enough to let the kiddos get involved. On those nights when you just want to get something made quickly, without the argument, whip up a batch of these little pizzas. INGREDIENTS Refrigerated pizza dough (or make your own) Pizza sauce - get the smallest jar, you won't need much Mozzerella cheese (shredded) Your favorite toppings   We chose: Pepperoni Sausage Mushrooms DIRECTIONS Lightly spray a cupcake tin with cooking spray. Spread out the dough and cut into 12 equal blocks. Tuck these squares into the cupcake tin. Spread the sauce evenly onto each pizza. Top with your favorite topping and cover with cheese. Pop in the oven according to the directions on the pizza dough package.  The kids chose what they wanted on theirs and nobody had to pick stuff off. Even the hubby liked it. Angel Chicken

This recipe can be found on the Crockin' Girls website, but I've pasted it below for you. I'm a sucker for slow cooker recipes because I like to fix it and forget it. This site has a ton of recipes to choose from. I have to admit, the thought of putting Italian dressing mix on my chicken did not sound appealing. However, the photo makes it look so yummy.  Angel Chicken @Crockin' Girls My attempts never turn out as pretty as the photos from where I find recipes. I'm just going to assume that the taste is the same and this one was pretty good. The Italian dressing was not overpowering, but gave it just a little kick of flavor. I would suggest more towards the 7 hours rather than 8 hours for cooking. Chicken just always seem to cook faster for me in the slow cooker. Ready to try it for yourself? Zatarain's from Klout

Are you familiar with Klout ? It's something I stumbled upon here in bloggy world. I'm still finding my way through it, but I have received some "perks" from it.  Zatarain 's sent me (and some other Klout users) a package of 3 types of their pasta dinner mixes. These are great to have in the pantry for those nights when you need to cook something quick. Our first pick was to try the gumbo. We almost always have shrimp and chicken in the freezer, but we decided to use the sausage we had from a recent buy one get one sale at the grocery store with the shrimp. It felt like it was a free meal! Plus, even though it's filled with flavor, it's not too spicy for the kids. The dinner was a hit and filled with the family quoting lines from Disney's The Princess and the Frog .  Bon Appétit!

Cheese Fondue

I haven't really disappeared - but my computer has. It has a mind of it's own, I swear. It works fine when take it to get looked at, but acts up when I bring it home. So, until I can get it really fixed, I'm not downloading my pictures onto it. Which is why I haven't posted anything for awhile. However, I did find a few pictures I had stashed away, so I thought I would get out here and post something. We love going to the Melting Pot restaurant, but it can be pretty pricey. Plus, I only want the cheese and chocolate anyway. So, we found a couple of recipes for cheese fondue that we can make at home. Yes, I do believe that fondue maker is from the 70's. It still works. You can also use a double boiler to melt the cheese and then use some Sterno to keep it warm. Chickpea and Edamame Salad

I've been looking for some healthier alternatives for lunch, so I was excited to come across this on Pinterest. The original recipe is from Mother Thyme , but I've altered it just a bit. This is perfect for those warm days when you just don't want to eat something hot. What's for Dinner - Hit or Miss

This past week was pretty busy, so I didn't have a chance to experiment with any new recipes.  Plus, hubby has taken over the cooking duties and it's tough work convincing him to try something new let alone requiring it to be healthy. Noooo, we can't have steak and potatoes every night dear. Actually, last night he made Fettuccine Alfredo with Shrimp and it was pretty good, even if he did burn the garlic bread - twice. Meanwhile, I've been gathering more dinner ideas. This week I have pinned these: Southwest Chicken Foil Packet These were pinned on different days, so I must be craving Tex-Mex. Good thing it's  YoTaco Wednesday . The weather has been getting warmer, so I really like the idea of sending the hubby out to the grill instead of making my house hot with the oven. What's for Dinner- Crock Pot Chicken Marsala

I love a good Crock Pot meal.  With my busy schedule, I've been trying to dedicate at least one day a week to cooking that way.  This was probably one of the quickest chicken meals I have ever made.  I served it with a garlic rice (Uncle Ben's) that I will NEVER buy again.  I love garlic, but this way overkill.  The smell was overwhelming, so I knew it was going to be potent.  But the chicken ended up nice and moist, so it wasn't a total loss.
