I wish I could take full credit for this meal, but I can take credit for part of it. I had found a recipe for Adobo Pork Chops that I wanted to try, but it just so happened that a similar dish was being served up at our local Publix, except that it was cubed pork. I didn't even know there was such a thing. Cubed steak, yes, but not pork. It was already pre-seasoned and breaded so it was simple and fast to make. We really liked this one! However, the next time we went back, the pre-made stuff wasn't available so I went back to my original recipe to try and make my own. This really has a kick to it, but not a burn in your mouth kick. Just lots of flavor. Paired with the potato salad it really makes a yummy meal. We turned our noses up at the potato salad as well, but once we tried it we loved it.
